La FAO entend commencer \u00e0 combler cette lacune avec la publication de&nbsp;<a href=\"http:\/\/www.fao.org\/3\/cb3913en\/cb3913en.pdf\"><em><strong>\u00ab\u00a0The nutrition and health potential of geographical indication foods\u00a0\u00bb<\/strong><\/em><\/a>.<\/p>\n\n\n\n<p>\u00c0 l&rsquo;heure o\u00f9 les IG de l&rsquo;UE participent au d\u00e9bat sur les moyens qui pourraient faciliter le passage \u00e0 des r\u00e9gimes alimentaires plus sains et plus durables,&nbsp;<strong>l&rsquo;\u00e9tude de la FAO explore le potentiel nutritionnel de plusieurs aliments IG ainsi que leur contribution possible \u00e0 des r\u00e9gimes alimentaires sains et \u00e0 la lutte contre les maladies non transmissibles.&nbsp;<\/strong><\/p>\n\n\n\n<p>\u00c0 travers cinq \u00e9tudes de cas, Carnalentejana (b\u0153uf portugais), Furu (tofu ferment\u00e9 chinois), Parmigiano Reggiano et Grana Padano (fromage ferment\u00e9 italien), Rooibos (tisane sud-africaine) et vari\u00e9t\u00e9s de riz indig\u00e8nes des hauts plateaux de Born\u00e9o (Malaisie\/Indon\u00e9sie), l&rsquo;\u00e9tude analyse&nbsp;<strong>le lien entre les processus de production et la composition nutritionnelle des produits finaux<\/strong>, en tenant compte \u00e0 la fois des nutriments ordinaires et des compos\u00e9s bioactifs qui n&rsquo;apparaissent g\u00e9n\u00e9ralement pas dans les tableaux nutritionnels.&nbsp;<\/p>\n\n\n\n<p>Il en ressort que&nbsp;<strong>les caract\u00e9ristiques nutritionnelles des IG peuvent \u00eatre largement attribu\u00e9es \u00e0 leurs ingr\u00e9dients et proc\u00e9dures de production uniques, li\u00e9s \u00e0 leurs origines g\u00e9ographiques<\/strong>.&nbsp;Par cons\u00e9quent,&nbsp;<strong>le d\u00e9veloppement de cahiers des charges des IG<\/strong>&nbsp;est crucial pour maintenir et am\u00e9liorer les valeurs nutritionnelles des IG et l&rsquo;\u00e9tude recommande de&nbsp;<strong>sensibiliser les producteurs \u00e0 la relation entre les m\u00e9thodes de production et la qualit\u00e9 nutritionnelle d&rsquo;un produit<\/strong>, afin de d\u00e9finir les cahiers de charges&nbsp;de mani\u00e8re \u00e0 am\u00e9liorer ou \u00e0 maintenir la qualit\u00e9 nutritionnelle des IG et leur contribution \u00e0 des r\u00e9gimes alimentaires sains.<\/p>\n\n\n\n<p>L&rsquo;\u00e9tude aborde ensuite&nbsp;<strong>le r\u00f4le des aliments IG dans les r\u00e9gimes alimentaires sains<\/strong>, en particulier la mani\u00e8re dont ils peuvent \u00eatre promus dans l&rsquo;alimentation quotidienne en devenant une partie int\u00e9grante de celle-ci ou en tant qu&rsquo;alternatives plus nutritives que les produits conventionnels similaires.&nbsp;<\/p>\n\n\n\n<p>Enfin,&nbsp;<strong>des suggestions sur la fa\u00e7on de tirer parti des IG pour une alimentation saine sont fournies, ainsi que quelques consid\u00e9rations sur les voies \u00e0 suivre pour la recherche et le d\u00e9veloppement sur la valeur nutritionnelle des IG.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Malgr\u00e9 la vaste litt\u00e9rature existante sur la valeur socio-\u00e9conomique des IG et leur r\u00f4le en termes de conservation de la biodiversit\u00e9, la recherche s&rsquo;est moins int\u00e9ress\u00e9e \u00e0 leur pertinence nutritionnelle et \u00e0 leur contribution \u00e0 une alimentation saine.
